Next Monday, I’m going to a Weight Watchers meeting. I have been trying and trying, but I just don’t have the willpower to go this alone. Especially when all of the people I hang around are a bunch of beer-swilling, cigarette-smoking, donut-eating guys.
However, I did come up with a quick and easy alternative to chili cheese nachos tonight and thought I would share.
First, let’s compare, shall we?
Taco Bell’s chili cheese nachos have 810 calories, 45 grams of fat, and 14 grams of fiber. That’s 68 Weight Watchers points!!
Here’s my version:
1 serving of Clancy’s Multigrain Tortilla Chips (11 Chips): 140 calories, 6 grams fat, 2 grams fiber
1 cup Campbell’s Chunky Grilled Steak Chili with Beans (whole can serves 2): 200 calories, 3 grams fat, 7 grams fiber
2 Tbsp Sam’s Lime & Garlic Salsa: 15 calories, 0 grams fat, 1 gram fiber
1/8 cup Kraft 2% Milk Colby and Monterrey Jack shredded cheese: 40 calories, 2.5 grams fat, 0 grams fiber.
How to make this is pretty self-expanitory…heat up the chili according to directions on can. Place chips on plate, then add chili, cheese, and salsa. Hot sauce too if you’re being adventurous; it’s calorie and fat free! The totals for this equal 355 calories, 8.5 grams of fat, and 10 grams of fiber! That’s 6 Weight Watchers points. A little bit better than Taco Bell’s, ehh?
Now, if I could only find a walking buddy.
I found another great Weight Watchers-friendly recipe for chili cheese nachos here…it sounds delicious and is even less points than mine!
